2 lbs red beans
5 stalks finely chopped celery
1 finely chopped onion
1 finely chopped green bell pepper
1 small bunch finely chopped green onions
6 cloves minced garlic
3 TBS cajun seasoning
3 TBS worchestershire sauce
2 TBS Dale's seasoning sauce
1 dash Angostura Bitters
5 Bay leaves
1 lb chopped beef sausage
1 lb chopped andouillie sausage
2 quarts beef bone stock or beef broth
2 to 3 quarts water
1 stick butter
1 tsp baking soda
If you're using dry beans, you will need to soak them in water overnight. Strain them before preparing the meal.
Mix everything (except butter and baking soda) in a large pot and cook until beans are done.
When fully cooked, remove from heat and add butter and baking soda. The butter makes it taste great, and the baking soda cuts down on the side effects of the beans.
Eat this meal over rice. Follow the directions on the rice bag.
NOTE: Andouillie sausage is a highly seasoned sausage. If you cannot find this, then find another good, well seasoned sausage to use in it's place.
