LeeAnn's Thai Ginger soup recipe

1 can coconut milk
3 cups chicken bone broth
1 tsp brown sugar
2 stalks lemon grass
3 cloves minced garlic
1/2 cup diced leeks
2 TBS fresh cilantro
1" grated ginger root
1/2 tsp lime zest
1 tsp Thai chili sauce
1 lb chicken thighs, diced
1 cup chopped mushrooms
1 TBS fish sauce

Combine coconut milk, bone broth, sugar, lemon grass, garlic, leeks, cilantro, ginger root, lime zest, and chili sauce in a pot. Bring to a boil and then reduce to simmer. Let simmer, stirring occasionally, for 15 minutes.
Add chicken, mushrooms, and fish sauce and simmer until chicken is cooked.
