This recipe is great for leftover chicken- you can use either fried or grilled, just make sure that it's boneless.
6 heirloom tomatoes
1 1/2 cup diced chicken
1 cup bacon crumbles
1 1/2 cup cheese
1 to 1 1/2 cup ranch dressing
Preheat the oven to 350* (If you want to bake them. They can be eaten cool.)
Cut the tops off the tomatoes and scoop the insides out. Dice the insides and throw them into a mixing bowl. Set the tomato "cups" aside.
Add your chicken, bacon, and cheese to the tomato insides. Add your ranch dressing; if you want it creamier add more. Mix well.
Stuff the insides of your tomato cups with the chicken mixture. The leftover mixture can be thrown into a small baking dish and baked along side of the tomato cups or eaten cold with tortilla chips.
If you want them baked, place on a cookie sheet with the baking dish in the center and bake for 30 minutes.
