This is probably not an authentic Mexican dish. This is just how we made it growing up.
Ingredients:
- 16 oz Fideo Noodles
- 1 lb ground beef
- 4-5 cups beef or chicken stock
- 1 small onion, diced
- 2 tsp diced garlic
- 1 (8-oz) can stewed tomatoes
- 1 TBS cumin
- 1 TBS chili powder
- 1 tsp salt
Directions:
Fideo noodles are really thick, short noodles. We usually used the Goya brand from Walmart. You could substitute broken up angel hair pasta if you can't find the noodles.
First, we would fry the noodles in a large hot skillet without anything added. This would turn the noodles into various colors giving it a multicolored look. Remove from skillet and set aside.
Add butter to the skillet and sauté your onion and garlic.
Now add your ground beef and cook until done.
Add toasted pasta, tomatoes, and stock and stir until well combined.
Bring to a boil and then turn down the heat to a simmer and cover.
Allow to cook covered until the noodles absorb all the liquid.
We always ate it just like this, but you can add sour cream, avocado, or shredded cheese to your bowl before eating.
