Buffalo Chicken Bake recipe

8 to 10 potatoes, peeled and diced
1/3 cup lard or olive oil
1 1/2 tsp salt
1 TBS paprika
2 TBS garlic powder
6 TBS hot sauce
2 lbs boneless skinless chicken breasts, cubed
1/3 cup lard or olive oil
1 1/2 tsp salt
1 TBS paprika
2 TBS garlic powder
6 TBS hot sauce
2 cups cheese
1 cup crumbled bacon

Preheat oven to 500*, and spray a 9 X 13 baking dish with cooking spray.
In a large bowl mix together the first set of lard (or olive oil), salt, paprika, garlic powder, and hot sauce. Add the potatoes and stir to coat.
Dump potatoes into the baking dish and bake for 45 to 50 minutes, stirring every 15 minutes until the potatoes are cooked through.
Use the same large bowl and mix together the second set of lard (or olive oil), salt, paprika, garlic powder, and hot sauce. Now, add the chicken and stir to coat.
Once the potatoes are done, remove them from the oven and lower the oven temperature to 400*.
Dump the chicken on top of the cooked potatoes, and place back in the oven for 20 minutes.
In a skillet, cook your bacon (if you haven't already got it ready).
Remove the potatoes and chicken from the oven. Sprinkle with cheese and bacon then return to the oven for 10 to 15 minutes (depending on if you just want the cheese melted or crispy).
It can be served with Ranch Dressing or green onions.
